Guía de lúpulos para cerveza en base a estilo


Para muchos cerveceros novatos es un poco frustrante y desesperante elaborar una receta, también lo es en ocasiones para los profesionales. Es indispensable que exista un balance de lúpulo con el grano y sobretodo volumen del lote. Pero parte de lo que hace el homebrewing un hobbie interesante es el poder experimentar. Claro, existen lúpulos que van de la mano con algún estilo o son recomendados para tal tipo de cerveza por sus características que los hacen especiales. Existen cientos de especies de lúpulos, incluyendo algunas especies que aun no tienen ni nombre porque son experimentales, pero cada lúpulo cae dentro de tres categorías.
  • Amargor:  Estos lúpulos contienen altos contenidos de Ácidos Alpha (Alpha Acids) los cuales proporcionan el amargor en la cerveza o mas bien los IBU's (International Bittering Units) que nuestra cerveza tendrá. El nivel de amargor depende mucho del tipo de lúpulo que se utilicé como el tiempo en el que permanece en el mosto durante la cocción.  Para mayor amargor se recomiendan tiempos entre 60-90 minutos de cocción con el lúpulo.
  • Aroma: Este tipo de lúpulo tiene un bajo contenido de Ácidos Alpha lo cual no lo hace muy amargo aunque también imparte algo de amargor. Este lúpulo es caracterizado y utilizado para añadir aroma a la cerveza. Esto depende del tiempo en el que permanece en cocción en el mosto. Para estos lúpulos se recomiendo añadirlos entre los últimos 20-15 minutos de la cocción.
  • Híbridos: Estos lúpulos tienen una carga balanceada entre amargor y aroma y deben ser utilizados bajo discreción del cervecero.
Pero que especies pertenecen a cada categoría? Y cuales uso para tal estilo?
Yo se que se han de estar preguntando eso y es por eso mismo que les tengo una guia basada en estilos de cerveza con recomendaciones de lúpulo para respectivo estilo. La guia da información acerca de que lúpulos son recomendados para cada tipo de cerveza al igual que cuales pueden ser sus substitutos entre otras características. Estilos de cerveza

Una de las dificultades que me he encontrado a la hora de iniciarme y profundizar en el mundo cervecero, ha sido la identificación del estilo o familia al que pertenece cada cerveza, teniendo en cuenta la cantidad de clasificaciones, denominaciones, nomenclaturas,…, que existen y que te son nuevas al principio.

Se suele decir que existen tantas variedades de cervezas, como cerveceros hay en el mundo. Incluso, dentro de un mismo estilo, cada cerveza es única (sabores, olores, colores,…).

Para que os hagais una idea de la cantidad de familias y estilos de cerveza que existen con algunos ejemplos de marcas comerciales, aquí teneis el siguiente mural de la cerveza (lo podeis ver como imagen de alta resolución):


La clasificación más sencilla, es la de diferenciar las cervezas en dos grandes grupos según el tipo de fermentación: cervezas de baja fermentación o cervezas LAGER y cervezas de alta fermentación o cervezas ALE (grupo en las que se incluyen además las cervezas de fermentación espontanea o también denominadas LAMBIC).

Esta clasificación por si sola es demasiado genérica, teniendo en cuenta tanta variedad de cervezas. Yo utilizo para el uso diario una clasificación visual de estilos en forma de tabla periódica (similar a la tabla periódica de los elementos químicos), que partiendo de los dos grupos anteriores (ALE o LAGER), agrupa las cervezas primero en subgrupos o familias (20) que comparten alguna caracteristica que las diferencia de otro subgrupo (lugar de procedencia, componente utilizado en su elaboración, color,…) y luego dentro de cada familia clasifica las cervezas en estilos (65) (según la clasificación o la publicación que utilices, pueden ser más o menos).

Como cada estilo puede ser bastante amplio, en la descripción se incluyen los rangos habituales relativos a la densidad inicial, densidad final, % alcohol en volumen, los IBUS (unidades internacionales de amargor), SRM (color según el Método Estandar de Referencia) y una muestra del rango de color, en los que se mueven las cervezas de cada estilo.

Para poder profundizar más en cada estilo y avanzar un poco más en nuestro conocimiento cervecero, podemos utilizar la traducción al Castellano de la guía BJCP (Programa de certificación para juzgar cervezas. Pautas de estilos para Cerveza, Hidromiel y Sidra) que aunque es menos visual que la tabla periódica, es mucho mas completa.

Esta guía, utilizada por profesionales y cerveceros avanzados (organizadores y jueces de concursos de cerveza…), clasifica las cervezas en 23 Familias y un total de 81 estilos, y establece las caracteristicas de la cerveza que pertenece a cada uno de los estilos, como son el aroma, aspecto y sabor, la sensación en boca, impresiones generales y comentarios, los ingredientes, la historia del estilo, los rangos habituales de densidad inicial, densidad final, graduación alcoholica, los IBUS (unidades internacionales de amargor), SRM (color según el Método Estandar de Referencia) a los que denomina “Estadisticas vitales” y hace referencia a ejemplos de marcas comerciales para cada estilo.

Marcelo Scotta, Maestro Cervecero

Maestro. Marcelo Scotta en la planta de elaboración de la Cervecería Santa Fe, donde inició el aprendizaje del oficio en 1992.
Marcelo Scotta y lleva 25 años elaborando cervezas. Scotta pasó la mitad de sus jóvenes 51 años elaborando cervezas y entre sus creaciones se cuentan Cerveza Santa Fe Frost y Stout Extra; y las especialidades de otras marcas de la compañía como Imperial Amber Lager, Cream Stout, Weisbier, Scotch Ale e IPA.
“Elaborar una cerveza parece una tarea fácil, pero hacer una de calidad no lo es”, dijo Scotta. Cuando se hace referencia a calidad se habla de lograr siempre el mismo perfil pensado. Es fundamental tener el conocimiento y los equipos necesarios para poder lograr siempre la misma cerveza sin modificaciones en su sabor, aroma y color.
Lo primero que hay que saber es qué tipo de cerveza se quiere desarrollar y para ello es clave entender al consumidor, conocer sus gustos y necesidades. En la Cervecería, el área de marketing realiza estudios y pruebas en forma permanente. “En el caso de Cerveza Santa Fe Frost, por ejemplo, partimos de la necesidad de desarrollar una cerveza más refrescante que la receta original”, ejemplificó su maestro cervecero.
Luego de la etapa de investigación, es el momento de definir los ingredientes necesarios para lograr el producto deseado. “Para destacar los atributos de ‘refrescancia’, desarrollamos una cerveza más aromática y liviana. Esto lo conseguimos a partir de una malta que permite obtener una cerveza más seca y un lúpulo denominado willamette, que se caracteriza por ser más aromático”, afirmó Scotta.
Con todos los ingredientes desarrollados, se diseña la receta, en donde se detalla con exactitud el tiempo de cocción, maceración y reposo. En el caso de Frost —describió el maestro—, “definimos un proceso de maceración más largo que el habitual y una fermentación en tanques horizontales, lo que contribuye a lograr una cerveza más aromática y, por lo tanto, más fresca”.
Por último, Santa Fe Frost, al igual que todas las cervezas que se elaboran en Cervecería, se hacen a partir de un proceso cien por cien natural, es decir, sin aditivos ni conservantes de ningún tipo, sólo agua, cereales y lúpulo. Esto, aseguró Scotta, si bien es más complejo desde la elaboración, “permite obtener cervezas de calidad muy superior”.
El rol del maestro cervecero es cuidar la cerveza y para ello debe mirar toda la cadena de valor. Esto incluye desde la evaluación y desarrollo de los diferentes proveedores de materias primas, su transporte y almacenamiento, la supervisión del proceso de elaboración y, por supuesto, la tarea de controlar la calidad de la cerveza cuando se encuentra en el mercado.
Todos esos aspectos son clave a la hora de elaborar una cerveza de calidad y para ello es importarte tener el conocimiento y los equipos necesarios, pero especialmente se necesita pasión ya que es la fuerza que incentiva a la mejora continua. “Yo soy ingeniero químico, pero antes soy cervecero, me gusta hacer cerveza, mis raíces están en la elaboración y es un hobby que disfruto y que incluso practico de manera artesanal fuera del trabajo. Siempre hay algo de creatividad y magia detrás de cada receta”, concluyó Scotta, que no descansa y ya trabaja desde el área de innovación para sorprender a los amantes de la cerveza con algún nuevo producto.

Sindicatos Obreros Cerveceros

Los inmigrantes transformaron y renovaron la economía argentina. Produjeron el movimiento obrero organizado como resultante de las ideas socialistas y anarquistas traídas de Europa. Después de la década de 1870, aparecieron los primeros sindicatos.
En 1878, la Unión Tipográfica realizó la primera huelga en la historia de nuestro país, en lucha contra la jornada de 12 hasta 14 horas diarias que tenían los trabajadores, las condiciones de salubridad, el trabajo de niños y mujeres y los salarios insuficientes. Después de 1880 se crearon las sociedades de panaderos, carpinteros y yeseros.
En 1882, inmigrantes alemanes crearon el Club Vorwarts de fundamentos socialistas democráticos que originaron el socialismo argentino. En 1887, se creó La Fraternidad.
La Sociedad de Resistencia de Obreros Cerveceros de la Quilmes y Anexos se crea el 16 de julio de 1932. El 9 de agosto se designó la primera comisión administrativa; tenía como secretario general a Felipe Montiel. El 11 de setiembre, cambió su nombre por Sociedad de Obreros Cerveceros de la Quilmes. Una de las cláusulas fundacionales era que el sindicato no estaría embanderado con ningún partido político ni ideología. [1] Luego ocuparán un edificio de la empresa construido por la empresa sobre la calle Olavarría, aún en existencia.

En este edificio funcionó desde 1912, una fábrica textil de propiedad de un empresario alemán de apellido Lenz. Luego la adquirió la Sociedad de Obreros Cerveceros de la Quilmes. Aquí se instaló la Biblioteca Popular. En estas instalaciones el 15 de enero de 1951, fue agasajada la señora Eva Perón durante una visita que realizó a la empresa, transformada en cooperativa después de haber sido expropiada por la Justicia Federal. La primera acción educativa que tuvo esta entidad obrera fue crear la biblioteca “Gral. José de San Martín”, en noviembre de 1932, y un periódico mensual denominado “El Obrero Cervecero” que luego cambió por “El Rotativo Cervecero” con 4 páginas. El lema era: “Defiende los intereses de los obreros de la cerveza. Lucha por la creación de un sindicato en cada industria cervecera y bregará por la unidad de la clase trabajadora en general.”
La biblioteca fue incorporada a la Ley Sarmiento de Bibliotecas Populares el 7 de marzo de 1933. En Hudson, la Maltería, también contaba con una biblioteca.
En 1935 la municipalidad, por la Ordenanza Nº 915, le cedió una fracción de terreno de la Ribera a la Biblioteca de los Cerveceros de aproximadamente 12. m2 junto al Club Náutico bajo la prohibición de transferir en parte o en su totalidad el predio a otras instituciones. Luego en estos terrenos se instaló el Club Capataces Cerveceros de la Quilmes.
El Rotativo Cervecero - Revista Proletaria
El Rotativo se hizo revista con el subtítulo “Revista Proletaria”. Llegó a tener cerca de 40 páginas, con un tiraje de 5000 ejemplares y se extendió a todos los rincones del país donde hubiera empresas cerveceras, subsidiarias y afines. La redacción y la administración estaban en la calle Cervecería 645 (hoy Gran Canaria al 1200 entre Tres de Febrero y Entre Ríos) Quizá donde hoy se halla la Sociedad de Capataces de la Cervecería fundada el 4 de enero de 1948.
Si bien se insistía en prescindir de cualquier enrolamiento político era evidente su compromiso con la causa popular; se pronunciaba por la libertad de los trabajadores como integrante de la Unión Obrera Local; por la paz, ante la guerra entre Paraguay y Bolivia y por la democracia ante el fascismo que amenazaba la República Española y la amenaza nazi en Europa y sus remedos criollos.
El 16 y 17 de julio de 1938, en el segundo Congreso Ordinario que realizó la Federación se resolvió cursar un telegrama de adhesión al gobierno de la República Española, haciendo votos por la restauración de la paz y la conservación de la democracia. Esta adhesión fue respondida por el presidente del Consejo de Ministros Juan Negrín [2] por medio de un telegrama el 1º de agosto de 1938. Además, los obreros cerveceros de Quilmes habían hecho en marzo de ese año, colectas reuniendo $ 849,30 que se enviaron a la España republicana, 149 cajones de corned-beef, en el vapor “Alsina” que salió del puerto de Buenos Aires el 1º de mayo.
Y más adelante se enviaron a la Central de Amigos de la República Española, 1417 kilos de café, embarcados con destino a la España Leal en el vapor “Florida” que zarpó el 15 de junio de 1938. Se creó la Cooperativa Obreros Cerveceros de La Quilmes con el propósito de “... suministrar a los socios artículos de consumo y uso personal, máquinas, herramientas, etc.; establecer secciones de ahorro y edificación, propender a la educación económica del pueblo y propagar los principios de la cooperación libre”.
Entregaba subsidios en efectivo de hasta $ 100 a los obreros enfermos. Se dictaban cursos y conferencias sobre higiene y legislación laboral. Se formó un grupo filodramático, grupo teatral que realizó numerosas representaciones.
En la década del `30 la Sociedad logró de la patronal que se reglamentara el horario de trabajo, que se dotara a los obreros de ropa y calzado de trabajo, y que se disminuyera el horario de quienes hacían tareas insalubres, entre otras cosas.
El 13 de agosto de 1935, los operarios y operarias de esa fábrica habían fundado la Sociedad de Obreros y Obreras de las Tapas Coronas. Los primeros asociados fueron 63 obreras y 15 obreros.

La Sociedad bregó por esos años con tesón por la aplicación de la Ley Nº 11729 que contemplaba la pensión a la vejez y a la invalidez; por la ley de jubilaciones y por los asuntos del jornal diario que debían percibir los trabajadores a medida que aumentaba el costo de la vida.
Esas mujeres de la Tapas Coronas fueron las primeras luchadoras sindicales que tuvo Quilmes, de las que, lamentablemente, no quedaron constancias fidedignas, salvo la memoria de la gente.
Había una caja de Socorro Social con la finalidad de evitar las listas de suscripciones y crear un fondo común de prevención a fin de prestar ayuda en caso de fallecimiento o enfermedad. Los asociados pagaban una cuota mensual de $ 0,50 (el sueldo mensual en 1937, era de aproximadamente $100) y una vez al año se hacía la donación del jornal de un día. También se juntaban fondos por medio de fiestas, bailes y comidas.
En 1940, lograron el 100% de aumento en los sueldos para los trabajadores varones y el 30% de aumento para las mujeres (?) además, de 24 días de enfermedad paga.
Durante los años de la expropiación estatal tuvieron significativa actuación en el gremio cervecero Juan Carlos García y Dante Sívori; en los últimos años fue una figura referente el dirigente cervecero, José Luis Nacho Lagar.

Día del Trabajador Cervecero

  • EN 1932 COMENZÓ A CELEBRARSE EN EL PAÍS
Los festejos por el Día del Cervecero tienen un irrenunciable inicio en la historia del gremialismo argentino. Por eso, su instauración puede rastrearse hasta una fecha tan lejana como el 15 de julio de 1932, cuando los operarios, en su mayoría extranjeros o hijos de extranjeros, fundaron La Sociedad de Resistencia de Obreros Cerveceros de la Quilmes y Anexos.
Los fundadores pronto supieron que no eran bien vistos por los propietarios de la originalmente llamada Brasserie Argentine S.A. y, a partir de 1901, denominada Brasserie Argentine Quilmes, Pedro Federico Otto Bemberg y su hijo Otto Sebastián, prusianos. En la Argentina de los años 30 del siglo XX, cualquier cosa que oliese a anarquismo o socialismo, (por ejemplo la palabra “resistencia” en el nombre de un gremio) era motivo de despido o algo peor.
Tal vez por eso, dos meses más tarde (el 11 de septiembre), el gremio cambió prudentemente su nombre por el de Sociedad de Obreros Cerveceros de la Quilmes, e hizo notar que una de las cláusulas fundacionales era que la asociación no estaría embanderada con ningún partido político ni ideología.

La federación

Esos primeros operarios de la Brasserie Argentine Quilmes, agremiados, son el núcleo de esta historia. Para entenderla, es necesario registrar que en 1892 existían en el país unas 142 fábricas cerveceras, pero Otto Bemberg, sólo con Quilmes, elaboraba un tercio de la producción total del país, que por entonces superaba los 12 millones de litros.
Bemberg no se detuvo allí. Progresivamente compró otras plantas cerveceras (Buenos Aires, Córdoba, Santa Fe, Corrientes y Tucumán), hasta controlar en 1931, se calcula, el 80% de la producción cervecera. Su participación de mercado denota su magnitud industrial y ésta, a su vez, el conjunto laboral sujeto a esa estructura.
Fue esa fuerza laboral extendida por todo el país y alentada desde la primigenia organización gremial, la que 4 años más tarde, el 19 de enero de 1936, fundó la Federación de Obreros Cerveceros de Argentina (Foca), contraparte sindical de la Sección Gremial de Fabricantes de Cerveza, que desde 1927 congregaba en la Unión Industrial Argentina a las compañías cerveceras y malteras.
Para entonces, la industria cervecera no dejaba de prosperar por la directa relación del consumo con el crecimiento de las colonias agrícolas, y por la constante demanda en las principales ciudades del interior. Pero en 1937 el holding Bemberg entró en conflicto con el gobierno nacional, que desde una visión de nacionalismo económico cuestionó su expansión. En 1952 todas las empresas del conglomerado fueron nacionalizadas.
Fue en ese entorno ideológico cuando, en 1949, se firmó el convenio de trabajo entre la representación patronal y la ahora denominada Federación Argentina de Trabajadores Cerveceros y Afines (Fatca), donde, en reconocimiento por el esfuerzo gremial de quienes armaron la primera federación, se estableció el 19 de enero como Día del Trabajador Cervecero.

Belgian Blond Ale con maduración de tres semanas. Durante la maduración se le agregó coriandro y cáscaras de naranja, dándole un perfil similar a una Tripel pero menos alcohólica y mas refrescante.
Los parámetros de elaboración fueron los siguientes:

  • Empaste 3:1 en 63ºC por 40min, escalón a 66ºC por 20 y luego a 69ºC en recirculado por otros 20min. Los escalones mediante licor hirviendo.
  • Hervor por 70min con las adiciones de lúpulo correspondiente.

Especias

  • Coriandro 5grs al final del hervor y 11grs en maduración en frío.
  • Cáscaras de naranja 7grs en maduración en frío.
